A very high-quality knife made of Japanese steel (420 J2). Santoku is a Japanese knife that, due to its versatility, resembles a traditional chef's knife. A santoku knife differs from a traditional chef's knife in that it has a shorter blade, which makes cutting faster at the same time. The serrations on the blade prevent the cut surface from sticking to the blade. It would be good to have a santoku and a chef's knife in the kitchen. You would probably use a santoku more often, but you also need a chef's knife with a longer blade for some chopping tasks.
